These traditional doughnuts are so crusty and fluffy at the same time. They are like the sweetest childhood memory that almost every Lithuanian can relate to. Renata, the founder of the Sezoninė virtuvė (Seasonal Kitchen) blog , shared this recipe with us on the occasion of the Independence day of Lithuania while decorating ourclassical yet modern table.
400 g curd
200 g all-purpose flour
50 g sugar
1 teaspoon baking powder
2 eggs
1 teaspoon vanilla sugar
500 ml oil for deep-fat frying
Powdered sugar for dusting
1.Place the curd cheese, sugar (both regular and vanilla) and eggs in a mixing bowl. Whisk together until smooth and add flour. Knead it to make a dense dough.
2. This quantity of dough should make 30-35 small doughnuts. Use slightly damp hands to form the dough into small balls.
3. When the oil has reached the required temperature (about 180ºC), carefully drop 4-6 dough balls into the oil. Make sure your doughnuts don’t touch and move freely because they will expand while cooking. Small doughnuts will be ready in about five minutes
When the doughnuts are cooked, transfer them to a plate lined with a paper towel to drain and cool. Finally, when the doughnuts are cool, dust them with powdered sugar.
